- bell peppers (all colors)
- jalapenos - I think. They don't call it that, but it looks the same.
- cayenne pepper
- oven ready noodles
- hoisen sauce
- watercress - kinda. I can only find it in a mixed leaf salad bag, so I can buy that and then separate it out (oh, so much work!)
- corn meal - is corn flour the same thing?
- chili flavor packet - but I do have mexican chili powder. Does anyone know if I can use that instead?
- jack-o-lanteern pumpkins - but I do have kent pumpkin or butternut pumpkin.

Enchilada Casserole
1.5 lbs hamburger (browned)
add 1 small onion (chopped)
1 can chopped green chilis ( the can size is about half the size of a soup can)
1 can chedder cheese soup
1 cup salsa
.5 cup mozzarella cheese
.5 cup chedder cheese
In a lasagna pan layer oven ready noodles to cover the bottom then layer the meat mixture, more noodles, more mixture and top with more noodles. Top with cheese and drizzle with 2/3 cup of water (to cook the noodles) Cover with foil and bake at 350 for about 50 minutes.
Really easy, very yummy, freezes very well, kind of like a mexican lasagna.

K, so I normally make this recipe in a much simpler way, but it sounds like you might have to make it all fresh so it will be slightly more work for you. Hopefully they have all the stuff there for this.
Green Chili Enchiladas
1 large can chicken (if they sell it there like that... otherwise just boil a couple of chicken breasts and shred them up)
1 can cream of chicken soup
1 16 oz container sour cream
1 can (or a couple of chopped up) jalepenos
1 can (or a couple of chopped up) green chiles
mix all of these ingredients together.
put mixture in tortillas with as much shredded cheese as you like. roll them up and put them in a greased baking pan. If you have access to green chile enchilada sauce then pour over your enchiladas in the pan and top with more shredded cheese (again, as much as you like)- if you don't have the sauce then just top with the cheese. Put them in the oven on 375 or so until the cheese on top is all bubbly and melted.
Hopefully this works out. This is one of my favorite recipes for enchiladas- but mostly because I have access to everything all canned and so it is really easy.

One more comment regarding my recipe is that it makes a lot of enchiladas so you will either want to invite people over or you will have to be okay with leftovers for a few days. I think that the recipe usually makes between 8 and 10 enchiladas.
Oh and we use flour tortillas for this- but if you use corn then you will probably want to fry them in a little bit of grease first so that they are more flexible.:)

I have an easy delicious salsa recipe for you. If you like sweeter mango salsa's, then you will like this.
Savory Strawberry Slasa
2 cups strawberries; chopped.
1 cup avocado, peeled and chopped.
1/2 cup cucumber, chopped and seeded.
2 tablespoons honey.
1 teaspoon shredded lime peel.
2 tablespoons lime juice.
1 to 2 tablespoons seeded and chopped jalapeno pepper.
And a little bit of pepper.
This salsa recipe really only takes about 5 minutes, and it looks so colorful and yummy. Also if you feel adventures you can add mango or any other of fruit that you like.
Also if I have any left over I bake some chicken with strawberry jam on it, and then serve the salsa on top of the chicken, it is good.
I will try to add some more recipes.
guacamole is really easy to make...
mash up an avocado or two, chop a quarter to half a small onion and a nice ripe tomato. Squeeze in half a lemon. Salt and pepper. You can also add roasted corn or chopped peppers. Add whatever you want...the important things are the avocado, lemon juice, salt and pepper.
Fajitas are really easy, too. Caramelize tons of sliced onions and peppers in some olive oil in a skillet. (really let them cook down) Cut steak or chicken into strips and add it to your cooked onions and peppers and cook through. Just season with salt and pepper, or your mexican chili packet. Wrap in flour tortillas.
